The shift sheet got wet. The legible notes make it possible to reconstruct the order and identify who inspected in the middle.
What we know for certain
Each suspect carried out exactly one inspection; there were three consecutive, non-overlapping shifts. The culprit removed the sheet during their own shift. The surviving notes are true, and the sensor correctly identifies the second inspection. Nobody returned to the table afterwards.

01The table sensor
The sheet was still present at the end of the first shift and was removed during the second, never returning afterwards.
02Nerea's note
The manager's note confirms that Nerea inspected before Quim. It does not say their shifts were consecutive.
03Ina's break
Ina did not take the middle shift. Her documented break covered that entire second inspection.
04Nerea's call
Nerea could not take the second shift either: her call from reception covered that exact time slot.
05The access log
Ina, Quim and Nerea each took one of the three shifts. Only one person entered per shift, and the order never changed.
